Shrimp & Grits Eggy Bits

When I was little, my mom would teach me big words at a young age. One of the most used big words of my youth was “concoction.” I loved making concoctions. Both edible & inedible. Give me some ketchup, powdered sugar, honey mustard, flour, & maybe some crunchy leaves and I could give you a three-course meal! I would also make more edible concoctions in the kitchen with my mom by my side. Yep, that was one of my things when I was little, whipping up concoctions in the kitchen.

Fun fact: Two of my favorite dishes are Shrimp & Grits and Deviled Eggs. The other day as I was bored with what I had in the fridge, and craving both of those dishes when I thought, what if I made a deviled egg that was filled with shrimp & grits?? Most would be hesitant at the thought, but I was all in!! And I have to admit, it’s pretty dang tasty. So today I want to share with you my newest concoction. I call it “Shrimp & Grits Eggy Bits”

Shrimp & Grits Eggy Bits

Ingredients
  1. 12 Boiled Eggs
  2. 1 C Salad Shrimp (thawed)
  3. 1/2 C Corn Grits
  4. 2 C water
  5. 1/2 C Shredded Cheddar Cheese
  6. 2 Wedges of Original Laughing Cow Cheese (cut in pieces)
  7. 1/3 C Milk
  8. Dash Hot Sauce
  9. 1 Green Onion (chopped, white part included)
  10. Salt to taste
Instructions
  1. Boil Eggs
  2. Cook grits by boiling 2 cups of water. Once boiling, add grits & cook on low until thickened. Stir frequently to avoid clumping
  3. While grits are cooking, sauté chopped green onion for 1 minute in a skillet
  4. Add shrimp to skillet & cook until translucent. (Optional: Throw in a few dashes of hot sauce if you like things a little spicy!)
  5. Once grits are cooked, add shredded cheese, milk, & Laughing Cow cheese. Stir until cheeses are melted.
  6. Add half of shrimp shrimp mixture & salt to grits
  7. Once eggs are fully cooked, run cold water over them to cool. Once cool, shell the eggs, cut them in half, & remove the yolk.
  8. Lay out your hollow eggs & fill with shrimp & grits.
  9. Garnish with remaining shrimp mixture

  1. Serve fresh
